Classic Illy taste with push-button convenience
I've been a fan of Illy espresso since the late 1980s, when it was the coffee at the break station at a Silicon Valley company I worked for. Since then, it's my go-to espresso for any new machine I have acquired, or even an old machine like my 1986-92 La Pavoni lever action espresso maker. In fact, I call Illy my "standard reference espresso" because I know what it's supposed to taste like and I know what I need to do to dial the shot.
A year or so ago, some dear friends were closing down their AirB&B and presented us with a De Longhi Nespresso-compatible capsule machine. I was convinced it couldn't produce espresso like my La Pavoni, but the results are consistent, immediate, and delicious—if you have the right coffee.
So I ordered some Illy capsules in the classic roast. My first shot was a little under-extracted—too much sourness from the acids and fats being extracted without the woody base notes at the end of the extraction. Two simple tweaks perfected the shot: when I heat the cup, I drop my Illy capsule into the hot water and let it warm up for 20-30 seconds. Then I make sure to run hot water through the De Longhi so that the brew chamber is at the right temperature.
Result: perfection, the typical Illy balance of smoothness with all three flavor components (tart, caramel, and woody) as I've come to expect from the brand. I'm getting 37g of espresso out from the 14g capsule, which is exactly the ratio I shoot for in the La Pavoni. With 120ml of steamed milk to hew to the Istituto Nazionle Espresso Italiano's certified cappuccino profile, this is now my breakfast drink. And it's perfect as an afternoon pick-me-up or post-prandial refresher. In fact, I think I'll brew one right now...
