Apreda is a chef of true international stature, having trained in the kitchens of luxury hotels.
At just twenty years old, after a brief stint as a commis at Rome’s Hotel Hassler, he set off for adventures abroad.
His boundless curiosity and his thirst for knowledge brought him first to London, at the Italian restaurant Ibla, and subsequently to Le Gavroche, the legendary restaurant where so many great chefs have made their bones, where stayed for a year and a half. This was a key launching pad that led him to the Green Olive, where he became a chef at just 26.
A year later, he left for Japan, where he ran the Cicerone restaurant in Tokyo’s Imperial Hotel. His three years in Japan allowed the chef to appreciate and interiorize Japanese food culture. He finally came full circle when he returned to Rome in 2003 as the Executive Chef at Hotel Hassler, and with his new project: the Imago restaurant, both an endpoint and a new start, which earned a Michelin star in 2009.
Between 2003 and 2018 Apreda was also a consultant at the Oberoi Hotel in India, where he co-opened two fine dining restaurants, Il Travertino in Delhi and Il Vetro in Mumbai, two beacons of Italian cuisine in India. Finally, in 2019 he moved to The Pantheon Iconic Rome Hotel where he opened his newest restaurant, Idylio by Apreda, which was awarded a Michelin star just six months after opening.
Apreda’s contemporary cuisine reflects the chef’s cosmopolitan nature and blends creative élan with a constant eye towards the traditions of Italy and Campania, while embracing Asia and India – the many spice blends he increasingly incorporates into his dishes testify to this.
