Restaurant LANTERNA VERDE
Chiavenna
1 Michelin star and Green star
During the initial years of his career, the cooking of the young chef Roberto Tonola has been dubbed “signature cuisine”. He combines in-depth research with the history of the Tonola family, which has been running the Laterna Verde restaurant, on the road to Maloja pass and the Swiss border, for three generations now.
At Laterna Verde, local products – trout, chestnut flour from the family’s chestnut grove, mountain herbs, milk, cheese, eggs, and meats and salumi from small local producers – are the foundation for marvellous dishes, steeped in history and knowledge, but prepared by Roberto with a contemporary twist, in full compliance with the sustainability of the restaurant project that previous generations pursued both in the kitchen and in the dining room.
A deep respect for the palate and for the local territory and environment, together with the great beauty to be found in Roberto’s dishes and in the restaurant’s surroundings, make this corner of Lombardy a sustainable stop that is not to be missed.
