Belgium is a land of great chefs and renowned restaurants – it does not lack for superb ingredients and creative minds in the kitchen. Here, when a chef manages to work in a unique location, such as the top floor of Antwerp’s Museum by the Stream, it can only mean they are chef of extraordinary relevance, and Viki Geunes certainly qualifies.
When in 2011 he was asked, together with his wife Vivian Plaquet who works alongside him as maître d’hotel, to move from Mol Restaurant to this new location, the understanding was clear: inaugurating a top-notch restaurant in a top-notch location. And so it was. The three Michelin stars on the front door are but a small acknowledgement of Geunes’s creative genius.
His origins in Burgundy are reflected in all of his six- or eight-course menus, and his creativity spans appetizers to desserts, with dishes of great beauty and skilfully layered flavours.
